Nine restaurants in Great Britain and Ireland have been newly awarded a Michelin Green Star to highlight their outstanding eco-friendly commitment and culinary excellence.
The South West was well-represented with Oak in Bath, Terroir Tapas in Bournemouth, and Wilsons in Bristol joining a total of 31 restaurants recognised with a Green Star in the latest Michelin Guide.
Other restaurants awarded Green Stars this year were: CHAPTERS, Hay-on-Wye, Powys, Wales; Marle, Heckfield, Hampshire, England; Moor Hall, Aughton, Lancashire, England; Pensons, Tenbury Wells, Worcestershire, England; Pine, East Wallhouses, Northumberland, England; Tillingham, Peasmarsh, East Sussex, England.
While there is no specific formula for awarding a Green Star, Michelin Guide’s inspectors are “simply looking for those at the top of their game when it comes to their sustainable practices. They consider things such as: the provenance of the ingredients; the use of seasonal produce; the restaurant’s environmental footprint; food waste systems; general waste disposal and recycling; resource management; and the communication between the team and the guests about the restaurant’s sustainable approach.”
