New tasting menu launched at Cornish restaurant to highlight local produce and minimise waste

Fallowfields, the two AA rosette-awarded restaurant at Housel Bay Hotel on the Lizard Peninsula, has chosen to dedicate the space to serving its popular tasting menu, updating from its previous á la carte offering.

Head Chef, Joseph Fallowfield said: “Whilst we receive some incredible feedback, the tasting menu that we offer in Fallowfields receives the strongest applause. We have therefore decided to dedicate the entire restaurant to this, a huge step for us which includes an entire new menu every six weeks. Our focus in Fallowfields has always been to present Cornish food in the best possible way; I think transforming our offering in this way allows us to further refine and improve our dishes and deliver an overall enhanced dining experience for our guests.”

This change is driven by Fallowfields’ commitment to building its offering around customers and showcasing the very best of local and seasonal produce from around the Lizard Peninsula. Additionally, the restaurant is committed to sustainability and the minimising of food waste, which can be achieved by offering one menu for guests.

Dishes in the opening menu for 2023 includes a monkfish carpaccio with last year’s tomatoes, Gouda tortellini with bacon and truffle oil, roasted cod with cucumber, apple and wasabi, and an aged beef fillet with suet shin pie and hen of the woods. The full menu is available to view on Housel Bay’s website.

Joseph continued: “This change provides us with an opportunity to get creative and to choose the very best ingredients, picked at their very best and cooked with our absolute undivided attention. This also gives me the opportunity to talk to our guests and explain the stories behind each of the dishes during the dining experience. I am personally extremely excited to share our new concept and I look forward to meeting each and every one of you.”

Fallowfields’ commitment to locally-sourced ingredients is evidenced through its list of quality local Cornish suppliers.

Housel Bay Hotel is also home to the more relaxed Terrace restaurant which will continue to serve the familiar favourites. The hotel bar, Marconi’s, also serves a range of seasonal cocktails and local drinks.

The tasting menu experience is priced at £65 per person or £110 per person with paired wines. Both restaurants can accommodate dietary requirements with a minimum of 24 hours notice.

Fallowfields is open from Wednesday to Saturday during winter, and Thursday to Saturday in the summer. Bookings are open to both hotel guests and the public and can be made from the website.
