
Steakhouse and bar concept Pasture has confirmed that its second Bristol site will open in January 2024. The company, owned by Sam Elliot, has secured a place in the Redcliff Quarter, a mixed-use development in central Bristol.
Pasture originally opened in Bristol in 2018 and has another venue in Cardiff. It acquired a 5,500-square-foot corner unit on St Thomas Street and Cross Street. The 75-cover Prime by Pasture will include a butchery, deli, burger outlet and cookery school and open for breakfast, brunch and dinner. The restaurant will have an on-site anaerobic digester to compost food waste.
Elliot, who worked as a chef director with Jamie Oliver, said: “At Pasture, we’ve always had a focus on high-quality food and sustainable production, and Prime by Pasture will allow us to expand on this even further. The restaurant will offer an exciting breakfast and brunch offering and ‘flip’ to burgers for lunch and dinner. We’ll also sell produce from our very own farm in Bristol and showcase some of our favourite ingredients from our incredible local suppliers. Finally, Prime by Pasture will also be home to our very own development kitchen, where we can pick up from the success of our live cookery demos during lockdown and welcome the return of Pasture at Home.”
