Cornish Bakery appoints Arnaud Kaziewics to lead food innovation

Cornish Bakery, one of the UK’s leading bakery coffee shop brands has appointed renowned chef and food innovator Arnaud Kaziewicz as its new head of proposition and product innovation. This new position has been created by managing director, Mat Finch and marks a significant step forward in the brand’s continued drive to enhance its food offering and customer experience across its growing number of bakery locations.

Arnaud Kaziewicz joins the business at an exciting time of exceptional growth and success with several new locations in the pipeline. Since the start of 2025, Cornish Bakery has recorded a 9% increase in like-for-like sales, bolstered by record-breaking trading over Easter and the May Bank Holiday weekends.

Born and raised in Le Mans, France, Arnaud trained as a chef in a Michelin-starred brasserie and spent the early part of his career in acclaimed kitchens across France, England, the USA, and Australia. He has since held senior food development roles, most notably as director of food at EAT and head of food at Red Engine, the operators of Flight Club and Electric Shuffle. He is also widely recognised from his appearance as a finalist on MasterChef: The Professionals in 2016.

Appointed by Mat Finch, Arnaud will lead the Cornish Bakery product team in the creation and development of a range of innovative new products, as well as refining the much-loved range of pastries, cakes, viennoiseries and pasties, all freshly baked on-site in every bakery, every day.

Mat Finch said, “We are delighted to welcome Arnaud Kaziewicz to the Cornish Bakery team. His impressive global experience, creative flair and deep passion for product makes him the perfect person to take our food innovation to the next level. His appointment reflects our company ambition to ‘Aim Higher’ in everything we do – from the products we offer to the overall customer experience, as part of our belief that ‘bakery is the new coffee shop’.”

Commenting on his exciting new role, Arnaud Kaziewicz said, “I’m thrilled to be joining Cornish Bakery at such an exciting time. The brand already has a strong reputation for quality and craft, and I’m looking forward to building on its heritage with new ideas, bold flavours and best-in-class bakery products that surprise and delight our customers.”

Recent Cornish Bakery product innovations have included a delicious apple crumble scone, indulgent Raspberry Crème Brûlée pastry, a feta and pea tortilla and a unique hazelnut pain au chocolat that balances indulgence with circular sustainability. Arnaud will spearhead the rollout of more product launches across Cornish Bakery’s national estate throughout 2025.
