
A unique collaboration between Dorset Sea Salt Co. and British chocolate pioneers Russell & Atwell has resulted in a limited ‘Butter Toffee Fresh Chocolates’ microbatch – blending fresh chocolate with mineral-rich sea salt – which sold out in under 24 hours.
Collected from the UNESCO World Heritage waters off Chesil Beach, Dorset Sea Salt’s oak-smoked salt undergoes triple filtration and gentle crystallisation using renewable energy. The result is a flaky, clean-tasting sea salt rich in minerals, ideal for enhancing the depth of smooth chocolate without overpowering it.
In this microbatch, only a trace of the oak-smoked salt was used yet its impact was clear. It lifted and balanced the flavour, drawing out the complexity of the cocoa while also naturally extending the chocolates’ fridge-stored shelf life.
Russell & Atwell’s fresh chocolate is crafted using British organic double cream, wildflower honey and carefully selected ingredients in small, chilled batches. For this collaboration, the team sought a salt partner with the same commitment to provenance and precision and found that in Dorset Sea Salt Co.
