Cornish Bakery launches new summer product range

Cornish Bakery, the independent, founder-driven company first started in Mevagissey, Cornwall, has just launched its innovative new summer product range complemented by a refreshed range of cold and iced drinks.

Available now across all of Cornish Bakery’s UK-wide bakeries, the new summer range joins the brand’s full selection of handcrafted food and drink, including its award-winning pasties and sausage rolls. Freshly prepared each morning by Cornish Bakery’s skilled bakery teams, the new products continue the company’s commitment to quality, craftsmanship and exceptional taste.

The brand-new seasonal menu features a selection of pioneering bakes designed to celebrate the brighter months, showcasing local Cornish suppliers wherever possible. This includes the eye-catching Lemon Meringue Croissant, inspired by the much-loved classic lemon meringue pie. This delightful all-butter croissant is generously filled with a smooth cream cheese and rich yuzu cream. Indulgent meringue pieces are folded into the filling before topping the croissant with marshmallows. These are then caramelised with a blowtorch creating a sticky, gloriously messy dessert-inspired pastry reminiscent of a Baked Alaska.

Cornish Bakery’s new star product – the delicious Chocolate, Banana and Peanut Butter Pastry – is inspired by the dessert crafted by Head of Proposition and Product at Cornish Bakery, Arnaud Kaziewicz, during his quarter-finals appearance on MasterChef: The Professionals. This all-butter croissant pastry is filled with crispy chocolate wafer, peanut butter, banana and caramel and coated with candied peanut pieces for extra crunch.

Set to be a big success, the new Orange and White Chocolate Chai Bun is an overnight-proved all-butter brioche filled with a velvety chai and orange crème brûlée custard. It is finished with a white chocolate and olive oil glaze, adding richness. Meanwhile, made with a light coconut sponge, the new Coconut and Raspberry Cake is finished with fresh raspberries and toasted coconut flakes, offering a delicious balance of sweetness and fresh berry flavours.

The Cornish Bakery team has also unveiled a refreshing range of chilled and iced drinks for the summer season, including its new signature showstopper, the Cornish Colada. Bursting with vibrant flavour, this completely original, non-alcoholic invention is the ultimate summer drink bringing a distinctly Cornish twist to the classic tropical flavour profile. It combines yuzu, lion’s mane mushroom, lime and coconut, and is then topped with a charred lime garnish for a refreshing citrus twist.

Cornish Bakery’s long-standing partnership with fellow Cornish brand Origin Coffee continues apace with the launch of a new cold brew range, created using Origin’s brand-new production facility following significant investment in its cold coffee capabilities.

The iced espresso range delivers a rich, creamy texture with a smooth finish. Available exclusively at Cornish Bakery as a Black, Flat White or Latte, the range reflects the growing demand for premium iced coffee, particularly among younger consumers, while celebrating two ambitious Cornish businesses continuing to innovate together. With Origin recognised as Cornwall’s largest exporter of coffee, the launch also showcases the strength of world-class food and drink innovation emerging from the county.

A new Earl Grey cold brew joins the summer drinks menu. Quintessentially British, this is slowly steeped to create a smooth, delicately fragrant tea with subtle citrus notes. It also forms the base of the bakery’s refreshing Iced Earl Grey and Peach Tea. Meanwhile, its popular matcha has been upgraded to a premium ceremonial-grade blend, bringing an even smoother, richer flavour to the Iced Matcha Latte. The bakery has also introduced a new artisan chai, sourced from a specialist supplier in Devon, delivering a more authentic and refined taste.

Head of Proposition and Product at Cornish Bakery, Arnaud Kaziewicz said, “All of these products have been developed to reflect our philosophy of using high-quality ingredients, classic flavours with a twist, and creating products that feel both indulgent and memorable. Our new summer range is all about celebrating the season while staying true to the craftsmanship and quality that people expect from Cornish Bakery and our suppliers. We’re constantly looking at how we can evolve our menus and appeal to new generations of food and drink lovers who are looking for something a little different.”

Arnaud continued, “Whether it’s our completely original Cornish Colada, the exclusive new cold brew coffee range developed with Origin Coffee, or pastries inspired by everything from classic British desserts to my own MasterChef creations, we want every visit to feel like a chance to discover something new. Alongside the new summer range, Cornish Bakery’s classic offering includes an extensive selection of freshly baked viennoiserie, artisan cakes and pastries, complemented by hand-roasted coffee from Cornwall’s B Corp-certified Origin Coffee roastery, expertly prepared using La Marzocco espresso machines.
