Ingredients:
- 1 bulb of garlic
- 1 butternut squash, peeled and diced (1cm)
- Olive oil
- Salt and pepper
- 8 Hanham Common Butchers Traditional Pork Sausages (skins removed)
- 4 pizza dough balls (or you can use shop-bought pizza bases)
- 4 large spoons of pizza sauce
- 1 bunch of sage leaves
- 1 mozzarella ball (125g)
- Micro sorrel
To cook the ingredients:

- Preheat the oven to 240°C/220°C fan/gas mark 9.
- Separate the garlic cloves, skins on, and place them into an oven dish with the squash. Add a glug of olive oil and season with salt and pepper. Stir to coat evenly.
- Roast, shaking occasionally, for 30–40 minutes.
- Meanwhile, drizzle a little olive oil in a second oven dish. Add the sausage meat and break it into pieces with a wooden spoon.
- Sauté in the hot oven for 5–10 minutes until crispy. There should be a slight caramelisation but not too much, as it will crisp up later.
To make the pizza:

- Stretch out each pizza dough ball into roughly 11-inch diameter bases.
- Dollop a large spoonful of sauce into the middle of each base and spread it out, leaving a 1cm border for the crust.
- Lay 7 or 8 sage leaves on top of the sauce, then scatter a quarter of the mozzarella over each pizza.
- Squeeze out a couple of the roasted garlic cloves and add them to the sauce.
- Evenly scatter the squash pieces and cooked sausage meat over the four pizzas.
- Return the pizzas to the oven and cook for 3–4 minutes, turning every minute or so until the cheese is bubbling and the ingredients have combined.
To serve:
- Leave for 3–4 minutes before tossing over some micro sorrel. Slice, then enjoy!
