Sustainable restaurant Ugly Butterfly to open in Cornwall

Chef Adam Handling is planning to open his sustainable casual restaurant and bar concept, Ugly Butterfly, in Cornwall. Originally trialled in Chelsea in November 2019, Handling will open a site at the Carbis Bay Estate, near St. Ives, on Monday 2nd August.

The restaurant will offer 65 covers, the bar an additional 65 covers and there will also be two private dining tables. Ugly Butterly is set to offer all-day dining with menus that are inspired by Cornwall and feature carefully sourced local ingredients.

To demonstrate “there is no such thing as good waste”, trims and offcuts from ingredients used in the restaurant will be repurposed to create snacks and drinks for the bar.

Handling said: “Everything we do at our restaurants and bars is based on the location and surroundings. It’s super important to me to support the local suppliers and Carbis Bay has a beautiful seaside and rural setting so we’ll be using more of the seafood and foraged ingredients that the area is well-known for.

“This area has already established a great reputation for food with some of the country’s best chefs and restaurants located here, and we are committed to adding to Cornwall’s dining scene.”

Before the restaurant opens, Harding has been commissioned to oversee the food at the G7 summit being held between 11th-13th June in the Carbis Bay Estate. He will create sustainable dishes for the world leaders attending to enjoy.
