Region’s next generation of star chefs graduate from Michael Caines Academy

The South West’s next wave of culinary talent is ready to make its mark in the hospitality industry, as 16 learners graduate from the Michael Caines Academy at Exeter College.

The Class of 2026 marked their graduation at Exeter College’s multi-award-winning student-run @thirty-four restaurant, with a celebration dinner hosted by Michael Caines MBE. The evening’s menu was prepared and served by first-year Academy students, giving them the chance to showcase the skills they have developed so far to their peers.

The Michael Caines Academy was launched at Exeter College in 2011 and aims to develop the South West’s future star chefs, restaurateurs and front-of-house professionals. Through industry training, masterclasses and work placements with local establishments, Academy learners are given the perfect proving ground to hone their culinary skills.

Since 2011, close to 200 young people have graduated and progressed into the sector, flying the flag for Exeter College both at home and abroad.

Previous graduates include Harrison Brockington, chef-owner of Gather in Totnes and winner of the 2026 Roux Scholarship, Ciaran Brennan, head chef at Michelin-starred Osip in Bruton and a 2026 Great British Menu finalist, and Mia Walter, who was crowned Riso Gallo UK & Ireland Young Risotto Chef of the Year 2025 in the year she graduated from the College.

This year’s graduating group includes Harry Parker. Harry completed his 6 week work placement at Micheal Caines’s Lympstone Manor in Exmouth and HOLM in Somerset. “I learned a huge amount from Jordan Denning and the rest of the team at Lympstone about keeping yourself organised, holding yourself to the highest standards and learning that every detail counts. This year for my placement, I have gone to a place called HOLM in Somerset, an ingredient focused restaurant all about showing what the local area has to offer with its produce. It’s taught me not to overcomplicate whatever I do and just focus on showing off the ingredients. Next year I plan on doing my Level 3 at Exeter College working part-time alongside my course.

“The Micheal Caines Academy has taught me not to take myself too seriously. I don’t think I could have asked for a better class of people – they help me and bounce ideas off me, we’re all very close. My favourite moment at College is probably our trip up to Bray to see the classical 3 Michelin star restaurant ‘The Waterside Inn’ and the innovative ‘The Fat Duck’ – both in one day.”

Alongside Harry Parker is Lana Cousley. Lana has really enjoyed the front of house element of her course and after she graduates is planning to stay on for a third year to gain a supervisory qualification in front of house. She is excited to see where that takes her next. “During my time with the Michael Caines Academy, I’ve had the chance to gain real industry experience through placements at Glebe House in Colyton and Darts Farm in Topsham. These helped me discover that front of house is where I thrive, working in a range of fast-paced and high-quality dining environments and supporting events like the Devon County Show.

“The course has taught me to believe in myself, trust my skills and instincts, and to work closely with others, whether that’s in the restaurant, in College, or at home. I’m leaving with a stronger understanding of the industry and experiences I wouldn’t have had otherwise. My favourite moments have been the friendships we’ve built as a group, supporting each other and creating memories that will stay with me long after College.”

Michael Caines MBE praised this year’s students and said he is excited to see how they contribute to the industry. “Seeing the talent, commitment and enthusiasm of this year’s graduates gives me great confidence in the future of our industry. Hospitality is all about people, passion and continuous learning. The Michael Caines Academy continues to play an important role in developing the next generation of hospitality professionals, and I look forward to seeing the positive contribution these graduates make as they begin their careers.”

Tracey Bennett, Head of Faculty for Hospitality, Hair and Beauty at Exeter College, said: “This year’s graduating class has given us plenty to celebrate. Over the past two years, and especially during the last year, they have shown dedication, resilience and a real passion for hospitality, and it’s been a pleasure to see them grow into confident young professionals.

“Our partnership with Michael Caines continues to be a huge strength. It gives each learner who joins the Academy access to brilliant experiences, insight and work placements that help prepare them for successful careers in the industry. This year’s graduates leave us as confident young professionals, and with them, the future of hospitality in the South West and beyond looks very promising.”

Working in partnership with Michael Caines MBE, the Academy combines professional cookery and hospitality qualifications with high-profile experiences, demonstrations and placements with leading employers across the region.
